If you always have one or two bananas in a bunch that get too ripe for your liking, put them to good use with this Banana Cake recipe from Instagram personality and foodie Stacey Kwamboka. This tasty Tuesday, try this delectable recipe and we promise you it'll be your new obsession. 
INGREDIENTS:
2 cups all purpose flour
1 tsp baking soda
2tspn baking powder
1 cup buttermilk (maziwa mala)
¾ cup cooking oil
3 eggs
1tspn of Nutmeg, Cinnamon and cardamom
2 medium-sized overripe mashed bananas.
¾ cup sugar (can be adjusted according to one's sweet tooth)


PROCEDURE:
  • Preheat the oven to 180°C.
  • Mix the dry ingredients (flour, baking soda, baking powder, spices)
  • In a mixer, whisk together sugar and eggs for about 5 minutes till you get a paste-like mixture.
  • Add in the buttermilk & oil and whisk together.
  • In equal parts of four, add the dry ingredients and whisk till all the lumps are cleared. You should have a thick batter when you are done.
  • Finally, using a spatula or a wooden mwiko, fold in the mashed bananas. Be careful not to overfold, and stop as soon as the banana is properly mixed in.
  • Thinly coat your baking tins and pour in your batter.
  • Bake at 180°C for 25 - 30 minutes.

*Best served with a hot beverage
